Ingredients
- 3 cups flour
- 200 grams room temperature butter
- 1 cup sugar
- 3 tbsp. sour cream
- 0.5 tsp. baking powder
Filling:
- 400 grams ricotta
- 2 eggs
- 1 cup of sugar
Directions
Preheat the oven to 350 degrees F.
For the crust, combine flour, sugar and baking powder in a large
bowl. Incorporate butter using 2 sharp knives or a dough blender until it
resembles small crumbles. Reserve a little less than a half crumbles into the separate
bowl for the topping. Add sour cream to the rest and make a soft dough using
your hands. It should turn into a big ball that doesn’t stick to your hands.

Roll the dough out on a floured surface about 1/8-inch thick.
Using a roller pin transfer to the buttered 10 by 15-inch baking sheet, making
an edge around.

Make filling by combining eggs, ricotta and sugar using mixer.
Sometimes it appears a little runny which is OK. Spread the filling on top of
the crust. Sprinkles the reserves crumbles.


Bake for 35-40 minutes, until the crust is set but not browned.
Allow to cool. Cut into squares and serve.
