
Strawberry jam is my favorite jam to eat and to make. Nothing
really compares with its. This jam always makes a great Christmas gift, so I
make a few large jars for myself and keep a few small ones to gift away.

The technique described below helps to preserve all the
vitamins and makes the jam dense without an addition of pectin. All you will
need is to boil it 3 times in 5-minute intervals over the period of 2 days.

Ingredients:
- 2 lbs. of fresh strawberries, cleaned and hulled
- 1 lb. + 1 lb. of sugar
Directions
Take a large heavy bottom pot and place in it all of the strawberries
and half of the sugar. Mix slightly and let the berries macerate for a couple
of hours. Cover the pot with some cheese cloth to protect from the attack of the
fruit flies. During this time the strawberries will produce some juice that is
needed to dissolve the rest of the sugar.
When ready, put the pot on the stove and bring it to boil. Add the rest of the sugar, make sure it dissolves completely and cook for 5 minutes. It will foam vigorously, so make sure the pot is large enough. Set aside and let it stand overnight.

The next day repeat the same process: bring the pot to boil,
cook for 5 minutes and set aside to cool down. Now we need to pour the jam in the jars and cover tightly
with lids.

I don’t bother with sterilizing the jars – just clean them
with soap and boil the lids for a couple of minutes. Keep the jam in a dark cool
place.
