Ingredients:
- 4 slices of rye bread or pumpernickel
- 5 0z. pickled herrings in oil
- 1 ripe avocado
- 1 large baked beet
- Half of small red onion
- 1 Lemon
- 3 Tbs. plain yogurts
- 1 tbs. horseradish sauce
- Ground black pepper
Directions
Peel and mash avocado in a small bowl. Sprinkle with a juice
of half lemon. Add salt and pepper to taste.
Peel the beet and slice thinly in half-moons. Peel the onion
and slice thinly as well. Dice the fish into small pieces.
Toast the bread lightly and spread the avocado mixture on
top. Place the herrings and beets.Serve with a
sauce, by combining juice of the other lemon half, sour cream and horseradish.
