I prefer to make my own beef stock for most of my soups. It doesn’t take much work but totally worth waiting.

To make the beef stock place everything but the stew meat in a large stock pot. Add 4-6 quarts of cold water, bring the liquid up to a boil and reduce to a simmer. Cook for 45-50 minutes then add the stew meat. Cook for another 40 minutes. Remove from the heat and strain the liquid discarding the bones and vegetables but keep the stew meat chunks. Slice them thinly and add to the soup at the very end.
